It’s summertime, and we’re thirsty! Keep cool with these deliciously easy alcoholic and non-alcoholic refreshments with fresh fruit and citrus that have been a hit at Culinary Capers Catering’s summer parties.
It is water flavoured with herbs; citrus; sweet and sour fruits; and sugar – the sky is the limited on cool combinations.
2/3 cup cantaloupe
1 1/3 cup watermelon
4 Tbsp granulated sugar
5 cups water
½ cup honeydew melon, ½ inch cubes
½ cup cantaloupe, ½ inch cubes
4 big mint sprigs
1 lime, sliced thinly
Purée first measure of fruit together in a blender with sugar and water.
Place second measure of fruit in a large (2 qt) pitcher, pour blended fruit over and fill remaining space with ice.
Garnish with mint sprigs and lime wedges.
Ginger Beer (non-alcoholic)
makes 4-6 servings
5oz fresh ginger
4 Tbsp muscovado sugar
1 litre soda water or sparkling mineral water
sprigs of fresh mint
Grate your ginger on a coarse cheese grater (leave the skin on if you like).
Put the ginger with its pulpy juice into a bowl and sprinkle with muscovado sugar.
Remove the rind from 2 lemons with a vegetable peeler, add to the bowl, and slightly bruise and squash with something heavy like a pestle. Just do this for 10 seconds, to mix up all the flavours.
Squeeze the juice of 3 lemons and add to the bowl.
Pour in your soda or mineral water. Allow to sit for 10 minutes and then taste.
Add more lemon or sugar to your own taste.
Pass the ginger beer through a coarse sieve into a large jug and add lots of ice and fresh sprigs of mint.

Ruby Red Cherry-Citrus Sangria
makes 8-12 servings
1 bottle rosé wine (750 ml)
1 cup Chambord or other quality cassis or blackberry liqueur
1 cup 100% cherry juice (no sugar added)|
½ cup fresh orange juice
2 cups cherries, pitted and halved
1 small orange, halved and thinly sliced
1 lime, cut into thin rounds
2 cups chilled club soda
Combine everything except club soda in a pitcher and let sit at least 2 hours before using.
To serve, fill a glass with some ice, fill ¾ with sangria and top with club soda and serve.

Vodka Strawberry Mojito
makes 1 serving
4 – ½ inch cucumber cubes no skin
squeeze of lemon
1 oz Elderflower syrup
1 oz vodka
½ oz Chambord
½ oz Aperol
splash of soda water
Crush the strawberries, cucumber and lemon juice together with a muddler to release the juices. Strain through a fine sieve.
Combine all ingredients and mix in a shaker with ice.
Strain into a cocktail glass with ice and garnish with a fresh cucumber twist.

1 oz Absolut
1 oz Tequila of your choice
1 oz Bacardi white rum
1 oz fresh pineapple juice
Combine ingredients in mixing glass. Add, ice, stir to chill and strain into your martini glass.
Top with a twist of lime.
