Culinary Capers Catering’s Chocolate Chunk Cookies with Dulce de Leche

Chocolate chunk cookies with dulce de leche
Makes 3 dozen

2  cups cake flour                                                       
2 cups bread flour       
2 tsp  baking soda
2 tsp  baking powder
1 ½ tsp sea salt
1 ¼ cup softened unsalted butter
1 ¼ cup white sugar
1 ¼ cup brown sugar
2 eggs
1 tsp vanilla
1 ¾ cup semi sweet chocolate chips or chunks
Maldon sea salt flakes for sprinkling on top of cookie
Dulce De leche (this can be purchased at any gourmet grocery store)

Preheat oven to 325˚F.

Sift flours, baking soda, baking powder and salt together.  Set aside.

Cream butter and sugars together until very light and fluffy, approximately 5 minutes.
Do not skimp on the beating time.

Add eggs one at a time, mixing well after each addition.

Add vanilla.

Reduce speed to low and add dry ingredients. Mix until just combined.  Add in chocolate.

Scoop cookie dough to desired size* on a prepared baking sheet lined with parchment paper. Sprinkle with Maldon salt.

Bake cookies for approximately 12 minutes or until golden brown (for smaller sized cookies it will take less baking time). Let cool.

Sandwich two cookies together with some dulce de leche and enjoy!

*This recipe will make approx. 3 dozen – 2 tablespoon sized cookies.
