So what happens after an action-packed few days of catering for over 3000 people at multiple events during a city-wide international conference? Leftovers. 1045 pounds of leftovers to be exact. That’s when we call up our good friends at the Community Angel Food Runners (a program of the Greater Vancouver Food Bank Society).
Culinary Capers is proud of our longstanding partnership with the Community Angel Food Runners and be a part of the effort to reduce hunger in our community. Celebrating their 20th anniversary this year, the program collects and distributes over 760,000 pounds of food to over 24 agencies – feeding 1.2 million meals and snacks annually!
As a certified member of the Green Table Network, we are always looking for innovative opportunities to create less waste in our catering operation. Executive Chef Margaret is challenging our kitchen team to constantly find creative ways to take a surplus of useable food trimmings (vegetables/protein) and food products and turn it into delicious food for Food Runners. For example – one of our cooks (pictured below) stayed after work and made 22 litres of asparagus soup from asparagus stalks that was destined for the compost. Way to go Ella!
