Las Vegas, NV (March 31, 2014) – Culinary Capers Catering and Special Events was a winner at the 2014 CATIE Awards (Catered Arts Through Innovative Excellence). The CATIE Awards are presented by the International Caterers Association, at the annual Catersource Conference & Tradeshow, an international event attended by over 4,000 industry professionals. The awards are designed to recognize the achievements of caterers from around the world.
Culinary Capers’ winning entry for Best Barbecue or Picnic Menu was for a corporate event that featured an exotic Filipino inspired menu influenced by the best of British Columbia’s regional ingredients. Two hundred guests enjoyed specialty cocktails, hors d’oeuvre and showcased dishes of the Philippines that were roasted, grilled, prepared and plated at interactive food stations

Green Papaya Salad
serves 4 to 6
2 cups green papaya, peeled and seeded
1.5 cups cucumber, peeled and seeded
3 Tbsp fish sauce
1/4 cup calamansi juice or lime juice
2 tsp grapeseed oil
1/2 clove garlic, minced
1/4 cup brown sugar
1/2 tsp sambal (or more to your taste!)
1/4 cup fresh Thai basil, lightly chopped
1/4 cup fresh cilantro, lightly chopped
Julienne papaya and cucumber. Combine remaining ingredients and toss with papaya and cucumber.
