Wedding Menu Inspirations

For those of you thinking about getting married or in the planning stages of your wedding, here’s a quick article from Special Events magazine that shares this year’s trends in wedding reception menus.

We thought we’d share an innovative wedding menu from last summer. This elegant August wedding was featured in Wedluxe magazine.   Culinary Capers Chef de Cuisine Jonathan Chovancek created a stunning six-course menu for a chic couple that were food savvy and wanted the menu to be the highlight of their wedding.   110 guests dined on a tropically inspired menu that featured fresh, indigenous ingredients in the height of the summer season.

seared scallop stuffed with cherry tomato, crisp pancetta, radish sprouts and chipotle mayonnaise

Crispy wonton with fresh Dungeness crab flavoured with lemon grass and ginger served with a touch of cilantro mayonnaise

Edible spoon with Tuscan salad
roasted peppers, fontina cheese, smoked tomato mayonnaise, basil, crispy capers and dried black olives

Crêpe purse with porcini mushrooms
tender crêpe filled with wild mushrooms, fresh herbs and cream

Salad rolls with fragrant chicken
tender Chinese spiced chicken and lettuce served with a spicy sesame soy dip

butter poached lobster with a salad of grilled cantaloupe melon balls, frisée, watercress and a scallion crisp and a shot of chilled lobster soup garnished with Chilliwack corn foam

Granville Island Kasu black cod
served with seasonal vegetable jewels and a miso broth

Third Course
BC chanterelle mushrooms with confit of house-made chicken ravioli with Piave cheese

Grilled beef tenderloin with arugula salad
served with a Yukon gold potato croquette, Port jus, Dijon aïoli and an arugula oven-dried tomato salad dressed with aged balsamic and Manchego cheese shards

Citrus sorbet with Champagne soaked summer melon

Mango coconut tart with coconut custard, fresh sliced mango, rum syrup and lime cream
